Sherry's southwest turkey breast ..

Ingredients

  • 2 1/2 lbs turkey breast
  • 2 tsp butter
  • 1/2 tsp each, chili powder & dried oregano
  • 1/2 cup finely chopped celery
  • 2 cloves minced garlic
  • 8 slices cracked wheat bread, cubed,[about 3 cups.]
  • 1 41/4 oz drained, sliced black olives.
  • 3/4 cup lo-sodium chicken broth
  • 1/4 cup light cream
  • 2 tbsp chopped parsley
  • 2 tbsp chili powder
  • 1/2 tsp black pepper

Cooking Instructions

Preheat oven to 375. Rub turksy skin w/ butter. Sprinkle w/ chili powder and oregano. Set aside. Cook onion, celery, and garlic in 1/4 cup of the broth until soft. Stir in bread cubes,olives, broth, light cream, parsley,chili powder and pepper.Make a mound of stuffing in the baking dish. Place turkey breast on top. Bake for 1- 1 1/2 hrs.

Recipe Notes

To make this moist, I make sure to bake w/ the skin on, but for a healthier dish, I take the skin off before serving.
