Sherry's stuffed cabbage

Ingredients

  • 1 tbsp canola oil
  • 1 small onion,chopped
  • 2 cloves minced garlic
  • 1/2 cup uncooked white rice
  • 1 14.5 oz can fat-free,low sodium chicken broth
  • 3/4 tsp salt
  • 8 lg cabbage leaves
  • 1 lb groun turkey breast,like Shadybrook Farms
  • 1/2 cup shredded carrots
  • 1 lg egg
  • 2 tbsp fresh parsley,chopped
  • 1 1 lb jar pasta sauce
  • 1 14-1/2 oz can diced tomatoes in juice
  • 4 tsp cider vinegar

Cooking Instructions

In lg skillet sprayed w/ cooking spray,over med heat,add onion and garlic,cook,stirring,for 2 min. Stir in rice,add broth and 1/2 tsp salt. Cover,reduce heat,simmer until liquid is absorbed and rice is tender. Spread rice in jellyroll pan to cool. In pot of boiling water,cook cabbage until just softened,drain,rinse under cold water,pat dry w/ paper towels. Combine ground turkey,carrots,egg,parsley,remaining 1/4 tsp salt and rice. Fill each leaf of cabbage w/ 1/2 cup mix,roll up,tucking in sides. Combine pasta sauce,tomatoes and vinegar,spread 1 cup mixture in skillet. Top w/ cabbage rolls,seam side down,then remaining sauce.Cover,simmer over low heat until cooked, about 20 min. Uncover,simmer until thickened,about 10 min.

Recipe Notes

These are quicker to make than the traditional baked version, also they are lower in fat and calories,thanks to the ground turkey,instead of beef. You won't even notice the difference in taste though. They still taste great.
