Trim fat from pork chops. Make a slit or pocket in fat end of each chop. In lg bowl, combine apples, raisins, breadcrumbs, brown sugar, salt, pepper, and cloves. Add melted butter and chives to mix. Let stand 5 minutes. to blend. Stuff each chop w/ a generous amount of sfuffing, skewer w/ toothpicks to close. Heat butter in skillet. Brown chops slowly over med heat about 5 min on each side. Cut down toothpicks if too long. Add beef broth, bring to boil, then simmer over low heat for 25-30 minutes or until tender.
Remove toothpicks. Transfer to platter, pour juices from pan over chops and serve.
This is only one variation I cooked up for stuffed chops. You can substitute cranberries for the raisins, or 1 sweet apple and 1 tart apple.
