Sherry's stuffed pork chops

Ingredients

  • 4 1 1/2 inch thick pork chops
  • 2 medium apples, unpeeled,cored,chopped
  • 1/2 cup raisins
  • 3/4 cup fresh breadcrumbs,from french loaf
  • 1 tbsp brown sugar
  • 1/2 tsp each, salt & pepper
  • 1/2 tsp ground cloves
  • 2 tbsp melted butter
  • 2 tbsp dried chopped chives
  • 2 tbsp butter
  • 1 cup beef broth

Cooking Instructions

Trim fat from pork chops. Make a slit or pocket in fat end of each chop. In lg bowl, combine apples, raisins,breadcrumbs,brown sugar,salt,pepper,and cloves. Add melted butter and chives to mix. Let stand 5 minutes. to blend. Stuff each chop w/ a generous amount of sfuffing, skewer w/ toothpicks to close. Heat butter in skillet. Brown chops slowly over med heat about 5 min on each side. Cut down toothpicks if too long. Add beef broth, bring to boil, then simmer over low heat for 25-30 minutes or until tender.

Remove toothpicks. Transfer to platter, pour juices from pan over chops and serve.

Recipe Notes

This is only one variation I cooked up for stuffed chops. You can substitute cranberries for the raisins, or 1 sweet apple and 1 tart apple.
