Ingredients

  • 4 lg, 1 1/2 inches thick pork chops
  • 1/4 cup minced onion
  • 1/2 cup raw, long-grained rice
  • 1 cup lo-sodium chicken broth
  • 1/2 cup soy parmesan or regular parmesan cheese
  • 1/2 cup lo-fat ricotta cheese
  • 1/4 cup shredde mozzarella cheese
  • 2 tsp fresh dried basil leaves
  • 1 clove minced garlic
  • 1/4 cup crumbled gorgonzola cheese
  • 1 tbsp olive or canola oil

Cooking Instructions

Trim excess fat from chops. Cut & form a deep pocket in chops.

Saute onion in oil in lg pan. Stir in rice until lightly browned. Add broth, cover and cook 20 min. Uncover. Cook a few more minutes, fluffling w/ fork. Stir in parmesan, mozzarella and ricotta cheeses. Stir in basil, garlic, and gorgonzola cheese. In another lg. skillet, brown chops on both sides in pan sprayed w/ cooking spray. Don't over cook or brown. Stuff chops. Heat oven to 350. Put chops in a lg. casserole dish. Put any extra stuffing around chops. Cover chops. Cook for 1 hour.

Recipe Notes

One of the best parts of this meal is that the cooked stuffing does seem to seep out of the chops, so put the stuffing on a platter and then put stuffed chop on top. Great served with a simple salad.
