Ingredients

  • 1-1/2 lbs pork loin rib end roast,cut into 2" pieces
  • 1/4 cup flour
  • 1-1/2 tsp ground cumin
  • 1-1/2 tsp chili powder
  • 1/2 tsp salt
  • 3 tbsp canola oil
  • 2 med chopped onions
  • 1 14.5 oz can fat-free chicken broth
  • 2 lg sweet potatoes,peeled,cut into 1-1/2" pieces
  • 1 cup frozen peas
  • 3 tbsp chopped fresh cilantro
  • 1 tbsp lemon juice

Cooking Instructions

Toss pork w/ flour 1 tsp cumin,1 tsp chili powder and salt until well coated. In lg pot, heat 2 tbsp oil over med-high heat. Add pork,cook,until well browned,about 5 min. Add remaining 1 tbsp oil, add onions, cook until tender. Add broth,scrape up browned bits on bottom of pot. Bring to boil,cover,reduce heat to med-low,simmer 1 hr. Stir in sweet potatoes,remaining 1/2 tsp cumin,1/2 tsp chili powder,cover,simmer until pork & potatoes are very tenedr. 45-60 min.Uncover, stir in peas. Simmer until sauce is thickened,15 min. Remove from heat,stir in lemon juice and cilantro.
