Sherry's triple veggie dip

Ingredients

  • 1 1/2 cups lo-fat grated parmesan cheese, divided
  • 1 1lb,3 oz can asparagus spears,drained,chopped
  • 1 10 oz pkg frozen chopped spinach,thawed,drained
  • 1 8 1/2 oz can artichoke hearts,drained,chopped
  • 1 8 oz container chive& onion light cream cheese
  • 1/2 cup light mayonnaise

Cooking Instructions

Preheat oven to 375. Reserve 1/4 cup parm cheese,set aside. Mix remaining 1 1/4 parmesan cheese and all other ingredients. Mix well. Spray a 2-quart casserole dish w/ cooking spray Spoon mix into caserole dish,sprinkle reserved parmesan cheese over mix. Bake for 35 min. Serve hot w/ mixed cut up veggies, i.e: broccoli,carrots,peapods,etc.

Recipe Notes

This is a wonderful way for kids to get their veggies, especially since it's low in calories and fat. CAL:55 per 2 tbsp each serving FAT: 5g SAT FAT: 2g
