Sherry's vegetable,oniony-beef so..

Ingredients

  • 1/2 lb lean angus stew meat, cut into 1-inch pieces
  • 1 tsp olive or canola oil
  • 2 cups thinly sliced onion
  • 1 tsp Splenda
  • 3/4 tsp lo-sodium salt
  • 2 tbsp minced garlic
  • 1 1/2 cups water
  • 2 14 1/4 ounce cans beef broth, no fat
  • 1 14 1/4 ounce can, no salt added whole tomatoes,undrained and chopped
  • 1 tsp dried thyme
  • 1 tsp black pepper
  • 1 bay leaf crushed or whole
  • 2 cups coarsely chopped bok choy cabbage
  • 1/2 cup celery,copped
  • 1 1/2 cups thinly sliced carrots
  • 1 med yellow squash, cut into 1-inch chunks
  • 1 med zucchini, cut into 1-inch chunks

Cooking Instructions

Coat a dutch oven w/ cooking spray. Place over med-high heat. Add steak, cook until brown on all sides. Remove stk. Set aside. Add oil to pan, add onion, saute 5 min, until tender. Reduce heat to med-low. Add sugar and salt. Cook 15 min or until golden, stirring occasionally. Add garlic, cook 1 min. Add beef, water and next 5 ingredients to onion mix. Bring to boil. Cover,reduce heat and simmer 1 hr. Add cabbage and remaining ingredients. Cover,simmer 30 min. Remove,discard bay leaf. Serve w/ country style biscuits.
