Sherry's zucchini w/ tomatoes

Ingredients

  • 1 1/2 tsp olive oil
  • 4 cups sliced zucchini
  • 1/2 cup chopped onion
  • 2 lg cloves garlic, crushed
  • 1 14 1/2 ounce can no-salt added whole tomatoes,undrained and chopped
  • 2 tsp chopped fresh oregano
  • 1 tsp thyme
  • 1/4 tsp Salt and freshly ground black pepper

Cooking Instructions

Coat a lg pan w/ cooking spray. Add oil. Place over med-high heat. Add zucchini,onion and garlic. Saute until onion is tender.Add tomato and remaining ingredients. Bring to boil. Reduce heat,simmer,uncovered for 35 min. or until zucchini is tender.

Recipe Notes

Great w/ eggplant parmiagana, or chicken parmiagiana.
