Sherry Shallot Chicken Salad

Ingredients

  • 3 tbsp olive oil
  • 3 tbsp sherry wine vinegar
  • 1 tsp Dijon-style mustard
  • 2 shallots, chopped
  • Salt to taste
  • pepper to taste
  • 1 lb boneless chicken, cut into pinkie-sized strips
  • 1/4 lb mixed salad greens or mesclun mix
  • 1/2 cup carrot matchsticks
  • 1 cup herb croutons

Cooking Instructions

Preheat oven to 400F.

In a small bowl, combine the oil, vinegar, mustard, chopped shallots, and salt and pepper to taste.

Place the chicken strips in a baking dish in a single layer and pour the oil-vinegar mix over it. Add a few tablespoons of water to the dish and bake in preheated oven for 12 to 15 minutes. Place the salad greens, the carrots, and the croutons in a large salad bowl and toss.

When the chicken is cooked, dress the salad with the hot juices from the baking dish and arrange the chicken on top of the dressed greens in an attractive manner.
