Sherrys' slow-cooker style Autumn..

Ingredients

  • 2 cups peeled,chopped,sweet potatoes
  • 2 medium peeled,chopped parsnips
  • 1/2 cup chopped onion
  • 1 lb boneless pork shoulder roast,cut into 1-inch cubes
  • 1/4 tsp each dried thyme & rosemary
  • 1/4 tsp each Salt and freshly ground black pepper
  • 2 cups apple cider or apple juice.
  • 2 small sliced apples,(red/or green)

Cooking Instructions

In a 4-quart slow cooker place sweet potatoes,parsnips,apples and onion. Add meat to cooker,sprinkle w/herbs,salt and pepper. Pour apple cider over all. Cover,cook on low for 7-8 hrs,or on high for 3-4 hrs..

Recipe Notes

This makes a very warming stew for the cold fall nights. Serve w/ biscuits.
