Combine tartar sauce,scallion, and 1/8 tsp chipotle chile. Reserve. in lg heavy skillet,heat oil to hot, but not smoking. in bowl whisk together flour,beer,salt and remaining 1/8 tsp chipotle. Dip fillets,one at a time into beer batter. Fry fillets in batches,turning once, until golden brown. About 4-5 minutes. Drain on paper towels. Serve w/ reserved sauce.
These are great w/ fries or you can serve them on kaiser rolls as sandwiches.
