Shery's orangey basil chicken

Ingredients

  • 1 tsp canola/olive oli mix
  • 4 4 oz each boneless, skinless chicken breasts
  • 1 cup orange juice
  • 1/4 cup chicken broth
  • 1 1/2 tbsp fresh basil,chopped
  • 1/4 tsp each Salt and freshly ground black pepper
  • 12 1/2-inch thick orange wedges
  • 1 lg garlic clove,minced
  • 2 tsp cornstarch
  • 1 tbsp water
  • 1 tbsp basil sprigs, for garnish

Cooking Instructions

In a lg non-stick pan, sprayed w/ cooking spray, heat over med heat. Add chicken, cook 2 min each side or until well browned. Add orange juice and next 6 ingredients. Bring to boil. Cover,reduce heat and simmer 15 min. or until chicken is thoroughly cooked. Remove chicken and orange wedges from pan. Set aside and keep warm. Bring o.j. mix to boil. Reduce heat and simmer uncovered for 10 min until mix is reduced to 3/4 cup. Combine cornstarch and water, stir well. Add to juice mix. Stir constantly, until mixture is thickened. Trnsfer chicken and orange wedges to platter, spoon suace over chicken, garnish w/ bsil sprigs.

Recipe Notes

This is an elegant, yet easy dish to put together. Great served w/ rice pilaf.
