Shortbread Hearts

  • 1 /2 sticks (3/4 cup) unsalted butter or margarine (not spread), at room temperature
  • 1/2 cup confectioners' sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 1/3 cups all-purpose flour
  • 2 tablespoons granulated sugar

Cooking Instructions

Beat butter, confectioners’ sugar and vanilla in a large bowl with electric mixer until pale and fluffy. With mixer on low speed, beat in flour just until blended.

Shape dough into a 1-inch-thick disk. Wrap and chill at least 4 hours or until firm enough to roll.

Heat oven to 325°F. Have ungreased cookie sheet(s) ready.

On a lightly floured surface with a floured rolling pin, roll the dough to 3/8-inch thickness. Cut with 11/2-inch heart-shaped cookie cutter. Place 1 inch apart on ungreased cookie sheet(s). Sprinkle with granulated sugar. Reroll scraps.

Bake 11 to 13 minutes until set but not browned.

Remove to a wire rack to cool completely. Store airtight.

Note: This recipe makes lots of cookies, and they freeze well.
