Shrimp and Grits

Ingredients

  • 1/4 Cup Hot Pepper Sauce
  • 1/3 Cup Dry White Wine
  • 1 Shallot chopped
  • 1 Tbsp Fresh Lemon Juice
  • 1 Tbsp Vinegar
  • 1 Cup Whipping Cream
  • 3 Cups Water
  • 2 Cups Whole Milk
  • 1/2 Stick Unsalted Butter
  • 2 Cups Corn Grits
  • 1/4 Cup Olive Oil
  • 8 Ounces (2 links) Andouille Sausage sliced
  • 1 Each Red & Yellow Bell Peppers chopped
  • 1/2 Cup Onion chopped
  • 4 Each Garlic Cloves chopped
  • 1 lb Large Shrimp peeled and deveined
  • 4 Plum Tomatoes chopped
  • 1 Tsp Cajun Seasoning
  • 1 Tsp Old Bay Seasoning

Cooking Instructions

Prepare the sause first - combine hot pepper sauce, wine, shallot lemon juice and vinegar in a small saucepan. Boil over medium heat until reduced to /2 cup. Stir in /2 cup cream cover and refrigerate. Prepare shrimp next - Heat olive oil in large heavy skillet over medium heat. Add sausage bell peppers onion garlic; saute until vegetables are tender. Add shrimp, tomatoes, cajun seasoning and Old Bay seasoning and saute until shrimp are opaque in center. Season to taste with salt and pepper. Last, prepare the Grits - Bring 1/2 cup cream, water, milk and butter to a simmer in a medium saucepan. Gradually whisk in grits, simmer until grits are soft and thickened stirring frequently. Bring hot pepper-cream sauce to a simmer. Spoon grits onto plates dividing equally. Spoon shrimp mixture over grits. Drizzle hot pepper-cream sauce over and serve.
