Ingredients

  • 1 medium red onion, peeled and sliced very thin
  • 1 avocado, peeled and cubed
  • 1 cup cherry tomatoes
  • 1 tbsp chopped fresh tarragon or 1-1/2 tsp crumbled dried tarragon
  • 6 tbsp olive oil
  • 2 tsp fresh lemon juice
  • 1 tbsp vinegar (optional)
  • 1 tsp salt
  • 1/2 tsp freshly ground pepper
  • 2 oranges, peeled and sectioned
  • 1 bunch watercress, washed, dried, and crisped
  • 1-1/2 cups large cooked shrimp

Cooking Instructions

Combine shrimp, watercress, orange sections, onion, avocado, and tomatoes. Blend the dressing, pour it over the salad just before serving, and toss.
