Ingredients

  • 4 slices frozen Texas Toast
  • stick butter
  • 11/2 lb frozen extra-large shrimp, thawed
  • 8 -oz pkg trimmed sugar snap peas
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 pt grape tomatoes
  • 1 tsp minced garlic
  • 3 Tbsp chopped parsley
  • 11/2 tsp grated lemon peel
  • Accompaniment: lemon wedges

Cooking Instructions

Heat broiler. Line a rimmed baking sheet with foil (for easy cleanup); place toasts on foil.

Melt butter in a large nonstick skillet. Add shrimp, peas, salt and pepper. Cook over medium-high heat, stirring often, 3 minutes until shrimp are almost cooked through.

Meanwhile broil toast 2 to 3 minutes, turning over once, until golden.

Add tomatoes and garlic to skillet, cover and, shaking pan often, cook 2 minutes until tomatoes soften and shrimp are cooked through. Stir in parsley and lemon peel. Serve with toasts and lemon wedges.
