Shrimp Scampi

Ingredients

  • 1 cup cherry tomatoes
  • 2 T lemon juice
  • 1 bunch basil chopped
  • 2 cloves garlic
  • 1/2 lb jumbo cooked shrimp chopped into bite sized pieces
  • 1 lb linguine
  • 1 loaf french bread
  • 2 T olive oil
  • 1 T salt
  • 1 T pepper
  • 2 T Parmesan cheese

Cooking Instructions

Cut each cherry tomato in half. Mince garlic. Remove tails from shrimp. Boil water and cook linguine according to packaging. In a medium saucepan sautee shrimp and garlic in olive oil over medium heat for approximately 5 minutes. Add tomatoes and basil and cook for another 2 minutes. Remove fro heat and add to linguine. Pour on lemon juice and stir. Top with Parmesan cheese salt and pepper. Serve with French bread.

Recipe Notes

In my family, we like to call this recipe 'Shrimp Frankie' - named after my little kitty-kat. Mmmmm Shrimp Frankie is so delicious!
