Shrimp with Ginger Dip

Ingredients

  • 16 uncooked large shrimp, peeled, with tails left on
  • Cilantro leaves and fresh ginger root strips, to garnish
  • 1 tbsp light soy sauce
  • 1 tsp rice wine
  • 1 tsp sesame oil
  • 1 garlic clove, crushed
  • 1 tbsp white rice vinegar
  • 1 tsp sugar
  • 2 tbsp chopped fresh cilantro
  • 1/2-inch piece fresh ginger root, peeled and finely chopped

Cooking Instructions

Using a small sharp knife, cut along the back of each shrimp and remove the thin black cord. Rinse and dry shrimp with paper towels and place on a plate. Mix together marinade ingredients and brush over shrimp. Cover and chill 1 hour.

Mix together ingredients for dip, cover and chill. Preheat broiler. Place shrimp on a broiler rack and cook 1 or 2 minutes on each side, basting with marinade, until cooked through. Garnish with cilantro leaves and ginger strips and serve with the dip.
