Shrimp with Sugar Snap Peas

Ingredients

  • 2 1/2 tablespoons butter or margarine
  • 8 ounces fresh sugar snap peas, trimmed and strings removed
  • 11/2 tablespoons minced garlic
  • 1 pound raw large shrimp, peeled, cut in half lengthwise and deveined
  • 2 teaspoons freshly grated lemon peel
  • 2 1/2 tablespoons fresh lemon juice
  • Ground black pepper to taste

Cooking Instructions

Melt butter in a large skillet over low heat. Add snap peas and garlic. Cover and cook, shaking pan occasionally, 5 minutes or until peas are crisp-tender.

Add shrimp, lemon peel and lemon juice. Stir over medium heat until shrimp are opaque throughout, about 4 minutes. Season with pepper to taste and serve immediately.
