Mix strawberries with brown sugar until the sugar has melted.
Put the strawberry mixture in a blender with the vinegar and corn starch. Blend well
Put the sauce on a low fire stirring constantly. Heat and set aside.
Separate the kataifi pastry into 16 parts. Take about the length of your palm and wrap a seasoned shrimp leaving the tail out. Proceed with the rest of the shrimp making 16 packets.
Coat a roasting pan with butter. Brush the packets with butter place in the oven at 180C for about 10 minutes or until golden brown.
Serve 4 packets to a plate. Drizzle the warm sauce over the packets. Garnish with mint leaves and fresh strawberries.
