SIMPLE BREAKFAST BURRITOS

Ingredients

  • 6 each small flour tortillas
  • 6 each eggs, whipped together
  • 1/2 cup cheese, chedder preferred, shredded
  • 1 can refried beans
  • 1/4 cup sour cream
  • 1/4 cup salsa or 1 small tomato chopped

Cooking Instructions

In a small skillet with a dap of oil or cooking spray, scramble eggs over medium heat until "just" done. (Don't overcook-when eggs are just about done turn off heat and let eggs sit.)

Spread a thin layer of refried beans on each tortilla, sprinkle with shredded cheese, add a tablespoon of salsa and sour cream to each.

Put 1/6 of scrambled eggs on each tortilla. Fold up one side about 1", bring up one side of tortilla and roll up to form a burrito.

Place each burrito on serving plate. For added goodness, serve with shredded lettuce and fresh tomatos.

Recipe Notes

Feel free to whatever cheese you have on had. Adding bacon, sliced pork, ham or chicken is delicious, even left over rice or potatos is good.
