Simple Summer Vegetable Soup

Ingredients

  • 2 tbsp butter
  • 1 onion, chopped
  • 2 carrots, scraped, quartered and sliced
  • 2 stalks celery, sliced
  • 8 cups Chicken Broth (p. 110)
  • 2 tomatoes, peeled and chopped
  • 2 zucchini, quartered and sliced
  • 1/2 cup string beans or peas
  • 1 cup fresh spinach, washed and cut into strips
  • Salt and freshly ground pepper to taste

Cooking Instructions

Melt the butter in a soup pot; add the onion, carrots and celery. Cook over medium heat, stirring often, for 5 minutes. Add the broth and tomatoes and simmer another 10 minutes. Stir in the zucchini and beans and cook 2 minutes. Add the spinach and cook 1 minute more. Season with salt and pepper to taste.
