Single Guy Chicken with Rice

Ingredients

  • 1 chicken hind-quarter
  • 1/2 cup long grain brown rice
  • 3 cans chicken broth
  • 2 cups any frozen vegie of your choice
  • half cup chopped onions
  • 1 Tbl garlic
  • 1/4 cup jalapeno pepper (finely chopped)
  • 1 Tbl salt
  • 1 tsp sweet basil
  • 1 tsp oregano
  • 1 tsp thyme

Cooking Instructions

saute the onions until clear

remove the skin from the chicken

place all ingredients in a large skillet and bring to a boil

turn heat down to low and cover

simmer for two hours

Very easy to fix. Adjust ingredients to suit your taste.
