Lightly saute the onions in the butter in a large pot.
After the onions are clear cut up the fish into bit size pieces and add them with the other ingredients to the pot.
Simmer on medium-low for 15 minutes.
Serve with oyster crackers and a shrimp salad.
I love oysters, but they only come around here at Christmas through New Years. My mother always made oyster stew on Christmas Eve. Now that she's gone I continue the tradition, but I do miss the fresh oysters.
