Ingredients

  • 1 (15 ounce) can whole kernel corn, drained
  • 2 (14.5 ounce) cans chicken broth
  • 1 (10 ounce) can chunk chicken
  • 1 (15 ounce) can black beans
  • 1 (10 ounce) can diced tomatoes with green chile peppers, drained

Cooking Instructions

Open the cans of corn, chicken broth, chunk chicken, black beans, and diced tomatoes with green chilies. Pour everything into a large saucepan or stock pot. Simmer over medium heat until chicken is heated through.

garnishes

If you feel like a little more preparation, you can pass small bowls of chopped cilantro, shredded cheese, sour cream, diced guacamole, and pico de guallo for garnishes. For tortilla strips, cut corn tortillas into 1/4" strips and fry for a few seconds in hot oil. Drain & add to soup to taste.

Warms your bones on a cold night

If you add a package of taco seasoning to the soup if really gives it a good flavor. Make some corn bread and it will warm your bones on a cold night.

simple yet effective!

If your sick and your not in the mood of spending hours in the kitchen. This is the perfect soup. Fast and as they say, chicken soup for the soul. =]
