Ingredients

  • 1 onion, chopped
  • 1 (16 ounce) can chili beans
  • 1 (15 ounce) can black beans
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 (8 ounce) can tomato sauce
  • 1 (12 fluid ounce) can or bottle beer
  • 2 (10 ounce) cans diced tomatoes with green chilies, undrained
  • 1 (1.25 ounce) package taco seasoning
  • 3 whole skinless, boneless chicken breasts
  • shredded Cheddar cheese (optional)
  • sour cream (optional)
  • crushed tortilla chips (optional)

Cooking Instructions

Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.

Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.

additions

i add a can of pinto beans and kidney beans also. i also put 3 10 oz cans of tomato with green chilis--makes it a little hotter

New Family Favorite

We loved it. Will make it again and again. Nice alternative to crock pot stew. Had it with corn bread.

Chicken Taco Soup

Served this to a neighborhood soup night and there was nothing left to take home! I used stewed tomatoes, boneless, skinless thighs instead of breast (don't dry out in slow cooker), added 1/2 bell pepper, a habanero and a jalapeno for some added bite, and served with extra sharp cheddar cheese, crushed tortilla chips, sour cream and chopped fresh jalapenos on the side. Also served Mexican Corn Bread recipe from AOL. With extra jalapeno, of course. The corn bread and soup were a great combination.

chicken taco soup

This was sooo good, I did add some chilie powder, cumin ,some red pepper flakes and an extra chicken breast and it was awsome and super easy too. I will definatly be making this through the fall and winter months.
