Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.
Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.

10/28/08 09:14 AM | Chicken Taco SoupServed this to a neighborhood soup night and there was nothing left to take home! I used stewed tomatoes, boneless, skinless thighs instead of breast (don't dry out in slow cooker), added 1/2 bell pepper, a habanero and a jalapeno for some added bite, and served with extra sharp cheddar cheese, crushed tortilla chips, sour cream and chopped fresh jalapenos on the side. Also served Mexican Corn Bread recipe from AOL. With extra jalapeno, of course. The corn bread and soup were a great combination. |
