Place the onion, chili beans, black beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours.
Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.

Chicken Taco Soup Slow CookerMy husband and I loved this soup. My husband likes more tomatoes, so the second time I made it I added a can of stewed tomatoes, which was wonderful. Both times I also added an extra chicken breast which made it just right for us. The crushed tortilla chips really make it tasty! |

huh? what??Picture isn't Chicken Taco Soup. Recipe calls for beans and corn which aren't in the soup that's pictured. Soup that's pictured has carrots and pasta which recipe doesn't call for. Huh? what?? |

GREAT!!!!!I found this recipe, give it a try and was it worth it. My bunch does not like black beans so I used 2 cans of chili beans instead and it turned out fine. I'll be making this all winter for my family. I highly recommend it to anyone who enjoys a little spicy flavor. |
