Place chicken, tomatoes, enchilada sauce, onion, green chiles, and garlic into a slow cooker. Pour in water and chicken broth, and season with cumin, chili powder, salt, pepper, and bay leaf. Stir in corn and cilantro. Cover, and cook on Low setting for 6 to 8 hours or on High setting for 3 to 4 hours.
Preheat oven to 400 degrees F (200 degrees C).
Lightly brush both sides of tortillas with oil. Cut tortillas into strips, then spread on a baking sheet.
Bake in preheated oven until crisp, about 10 to 15 minutes. To serve, sprinkle tortilla strips over soup.

03/25/08 11:32 AM | Great, easy recipeThis was soooo good! I can't imagine a recipe being any easier than this. I did add carrots and some cubed potatoes for a little more body. And for more of an earthy flavor I also added a couple roasted peeled pablano pepper cut up. However, I didn't add the cooked chicken until the very end since it was already cooked and I didn't want dry chicken. Yum! |

02/10/08 08:24 PM | One of the best I've hadI'm a big fan of Chicken Tortilla soup, and found this one to be one of the best. It's hearty rather than watery, and full of good flavor. Loved the fresh cilantro. You'll need extra baked tortilla strips for the leftovers - make more than is called for in the recipe. |
