Slow Cooker Mashed Potatoes

Ingredients

  • 5 pounds red potatoes, cut into chunks
  • 1 tablespoon minced garlic, or to taste
  • 3 cubes chicken bouillon
  • 1 (8 ounce) container sour cream
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup butter
  • salt and pepper to taste

Cooking Instructions

In a large pot of lightly salted boiling water, cook the potatoes, garlic, and bouillon until potatoes are tender but firm, about 15 minutes. Drain, reserving water. In a bowl, mash potatoes with sour cream and cream cheese, adding reserved water as needed to attain desired consistency.

Transfer the potato mixture to a slow cooker, cover, and cook on Low for 2 to 3 hours. Just before serving, stir in butter and season with salt and pepper to taste.

Makes Sense to Me

I always make a mashed potato casserole like this when I'm serving a big group, as I do for Thanksgiving. This recipe will allow me to save oven and stove space for other dishes, and keep the potatoes hot and out of the way. Yes, you cook them on the stove, but the key is getting them OFF the stove and having more room while you put the rest of the dinner together.

For Holidays Only

When having a holiday get-together and need a lot of mashed potatoes, this is the way to go. I hate, Hate, HATE cold mashed potatoes, and they always seem to be icy within 10 minutes of putting them on the table. By the time everyone is seated, they're gross. This method keeps them warm even if you can't get the rest of dinner together on time, and you can even leave the rest in the cooker so they're still warm in time for seconds.

Great!

This is a great way to cook and mash your potatoes, clean up the mess and keep them hot when you are having a large group for your holiday dinner. I have even made them the day before and put them in the crockpots the morning of my dinner on low. They're wonderful!

Pointless

No point in cooking potatoes for that long, youre just essentially keeping them warm fo 3 hours, and to popecorner, no do not boil your potatoes in a milk and butter, milk will curdle when exposed to high temperatures.

So, you are cooking them to cook them? Who wants to take the time to do that?! Just another dish to wash-very silly.
