Slow Cooker Pot Roast

Ingredients

  • 1 3-4 lb chuck roast
  • 1 pk Lipton onion soup mix
  • 1/2 cup water
  • 1/2 cup red wine
  • 4 lg red potatoes quartered
  • 3 med carrots sliced thick
  • 3 stalks celery sliced thick
  • 1 lg onion quartered
  • 1 lg parsnip sliced thick
  • 2 tbs flour
  • 2 dried bay leaves
  • 2 tbs fresh parsley chopped

Cooking Instructions

Put 3 tbs olive or cooking oil in a heavy skillet and brown roast on all sides. Place in pre-heated slow cooker.

Sprinkle with onion soup mix.

Dissolve flour in water and pour over roast.

Add red wine.

Add vegetables & bay leaves.

Cook on low for 8 hrs.

Remove bay leaves and add parsley before serving.

Recipe Notes

This is a hearty main dish for a chilly fall or wintry day. Especially good with hot cornbread.
