Slow Roasted Pork with RelishHi cooked this up on Father's Day and couldn't believe the wave of compliments I received. I varied the recipe slightly in that I used 1/2 the suggested salt and used a pork loin instead of a shoulder roast. The whole kitchen had a wonderful aroma as the meat cooked (2 hrs for a loin by the way). The relish was a very nice side but a bit too much - 1/2 recipe would have been plenty. I added a cold potato salad and melon balls for a wonderful combination of taste's. On a warm day like we had, it fit together nicely! |
