Smoked Adobo Chicken Tacos with Mango Salsa

Ingredients

  • TACOS
  • 8 6-inch corn tortillas
  • 1 whole roast chicken (about 2 1/2 pounds) pulled
  • 8 ounces fresh goat cheese
  • 2 ounces Adobo chili sauce
  • 4 6-inch by 10-inch cedar papers
  • 8 12-inch pieces butchers twine
  • MANGO SALSA
  • 1 whole mango (skinned seeded and chopped)
  • 1 tablespoon cilantro (chopped)
  • 2 tablespoons red onion (chopped)

Cooking Instructions

FIRST

Pull chicken from the bone and shred in large pieces. Place shredded chicken in a bowl add Adobo sauce and squeeze the peppers from the sauce. Toss chicken with sauce (add less Adobo sauce for mild).

NEXT

In a small bowl mix chopped mango cilantro and red onion. Mix well and set aside.

LAST

Heat grill or grill pan to medium heat about 400 degrees F. Spray each tortilla with nonstick cooking spray. Place two tortillas greased side down on each cedar paper; add desired amount of chicken and goat cheese. Roll the tacos then wrap cedar papers around them.

Tie with butchers twine and repeat. Cook on all sides for 10 minutes. Remove from grill and add salsa. Serve immediately.
