Smoked Salmon Spread

Ingredients

  • 1 brick (8 ounces) light cream cheese (Neufchâtel), softened
  • 1 stick (1/2 cup) butter or margarine, softened
  • 1/2 teaspoon freshly grated lemon peel
  • 1 tablespoon fresh lemon juice
  • 1 can (7.5 ounces) red salmon, drained, skin and bones removed
  • 4 ounces smoked salmon, chopped
  • 1/4 cup minced scallions
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon pepper

Cooking Instructions

Beat cream cheese, butter, lemon peel and juice with an electric mixer until fluffy. Stir in remaining ingredients. Pack into crock(s) or bowl(s). Cover and refrigerate.

 

Store: Refrigerator, 1 week

Good on toast or crackers.
