1. Combine all the ingredients for the sauce in a small bowl, and whisk them until they are well blended. Cover the bowl, and refrigerate the sauce until serving time.
2. In a medium-sized mixing bowl, prepare the marinade for the shrimp by blending the oil, garlic, and lemon juice. Add the shrimp, and coat them thoroughly with the marinade. Cover the bowl, and marinate the shrimp in the refrigerator for 20 minutes.
3. Prepare a home smoker according to the manufacturer's directions, place the shrimp in the smoker on a rack sprayed with vegetable oil, and smoke the shrimp.
4. To assemble the dish, line the shrimp around the periphery of an attractive platter, their bodies facing in the same direction and their tails pointing to the outer rim of the platter. In the center of the platter, place a small bowl of the remoulade sauce for dipping.
