Smothered Okra & Tomatoes

Ingredients

  • 1/3 cup of bacon drippings (from frying 1/2 lb. of bacon)
  • 1/2 cup lou ana vegetable oil
  • 1/2 lb ham, diced
  • 1/2 lb smoked sausage, sliced 1/4-inch thick
  • 2 lbs fresh okra, sliced crosswise to 1/2-inch thickness
  • 1 large green bell pepper, chopped fine
  • 1 large onion, chopped fine
  • 1 tbsp finely chopped garlic
  • 4 large tomatoes, peeled, seeded and diced
  • 1/2 lb small, peeled, raw shrimp
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp cayenne pepper
  • 1 tsp thyme
  • 1 bay leaf

Cooking Instructions

1. In a large, heavy skillet (2-1/2- to 3-quart size), heat the bacon drippings and vegetable oil at a moderate heat.

2. Add the ham and smoked sausage; brown, and then remove from the skillet; set aside.

3. Add the okra, green bell pepper, onion and garlic, and saute.

4. Cover and cook until the okra is no longer slimy.

5. Add the tomatoes, shrimp, salt, peppers, thyme and bay leaf, then the ham and sausage. Add water if needed.

6. Cook 10 to 15 minutes on medium heat.
