Smothered Pork Chops

Ingredients

  • 4 Boneless pork chops
  • 4 oz Mushrooms
  • 1/2 Chopped Onion
  • 1 Can Beef broth
  • Corn starch or brown gravy mix
  • 1 tbs extra-virgin olive oil

Cooking Instructions

Tenderize pork chops by seasoning with seasoned salt and poking all over with a fork. This gets the seasoning down into them and will make them more tender.

Add 1 tbs EVOO to skillet. Turn heat to a little over medium. Brown pork chops on both sides. Depending on the thickness of your chops this may take 5-7 minutes per side. I just kind of watch them and when some of the top starts turning white and the bottom is brown it is about done. Take them out of the skillet and put them off to the side for now.

Add onions and mushrooms to the pan. I sometimes add a little garlic as well. Saute these for just a couple minutes in the juices left in the pan. Then add the can of beef broth. I let this get to a boil, make sure you scrape up the stuff on the bottom of the pan for more flavor. When it gets to a boil you need to thicken it up. You can do this by adding corn starch, but that never works for me so I just add some brown gravy mix until it thickens up a bit. I can't really say how much you just have to watch it. You don't want it too thick, just so that it is not so watery. Now add the pork chops back to the mix, make sure they are covered with the liquid and cover them up. Turn the heat down to simmer or low and make the rest of your dinner. When dinner is ready so are the pork chops! I would let them simmer for at least 10 minutes but longer is okay they will just get more tender and juicy.

Serve chops covered in sauce, onions and mushrooms.

Recipe Notes

This is a recipe I got from a service I used to subscribe to. I changed it a little for my own tastes and my family really likes it. Be careful when seasoning the chops... with the beef broth you can make them too salty.

Excellant recipe..reminds of how they are cooked in Louisiana..just add rice with the meal!
