Preheat oven to 350. Grease baking sheets.
Combine flour, baking soda, baking powder, cinnamon, nutmeg and salt in medium bowl. Beat sugar and butter in large mixer bowl until well blended. Beat in pumpkin, egg and vanilla extract until smooth. Gradually beat in flour mixture. Drop by rounded tablespoon onto prepared baking sheets.
Bake for 15-18 minutes or until edges are firm. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Drizzle Glaze over cookies.
For Glaze: Combine 2 powdered sugar, milk, melted butter and 1 tsp. vanilla in small bowl until smooth.

I tried it with both canned and fresh pumpkin, and they taste much better with the fresh fresh, but it adds an extra 1 1/2-2 hours of prep time. This is only because you need carve and clean the pumpkin and bake it. |

10/04/08 09:48 PM | I liked 'emI thought this recipe was pretty good. The only thing I might do is add a little extra pumpkin next time, but that's personal preference. It was easy to make and cooked up very quickly (watch that oven). The icing was yummy and made the cookie, I will most certainly make them again. |
