sonj's philly cheesesteak Enchilada

Ingredients

  • lbs flap steak
  • 2 tbs olive oil
  • /2 tsp ground cumin seasoned salt or kosher black pepper onion & garlic powder
  • onions
  • green bell peppers
  • cups shredded cheddar and montery jack cheese
  • tbsp minced garlic
  • can green verde enchilada sauce
  • /4 cup worcestershire sauce
  • 2 cap full tequila "whatever brand you prefer"
  • 2 corn tortillas
  • 2 cup water
  • 2 cup beef stock
  • 4 chopped scallions

Cooking Instructions

Heat oven 350 F in a 2 quart shallow baking dish with nonstick spray. Marinate meat with season's preferably over night but 30-45 mins will due.

Cook beef in pot with 2 cups of water and beef stock until tender so it can be shredded. Let cool at least for 0 mins. In a skillet add olive oil onions and bell pepper and minced garlic cook for 5mins. Mix meat onions bell pepper and cheeses and green verde sauce leave enough cheese and sauce to spread over top.

Heat an oiled 9x9 pan with tortillas on them I found this to be easier then dipping them in oil to soften up. Spoon in /4 cup of steak mixture roll up and place seamed side down in dish. Spread sauce cheese olives and scallions over top and bake 45min or until cheese is golden brown.
