Southern Cobb Salad with Buttermilk Dressing

Ingredients

  • Buttermilk Dressing:
  • 1/4 cup plus 1 tablespoon Greek yogurt
  • 1/4 cup low fat buttermilk
  • 1 tablespoon minced shallot
  • 1/2 tablespoon white wine or champagne vinegar
  • 1/2 tablespoon chopped fresh chives
  • Salad:
  • 8 cups arugula or mache
  • 2 ears fresh corn, grilled or boiled and cut off cobb
  • 1 avocado, diced into large chunks
  • 1/4 cup crumbled blue cheese
  • 2 freestone, ripe peaches
  • 2 teaspoons olive oil
  • 1 1/4 pounds wild salmon
  • 1 - 15 inch cedar grilling plank, soaked

Cooking Instructions

FIRST: Combine dressing ingredients, season with salt and freshly ground pepper to taste. Set aside in refrigerator until ready to.

NEXT: Pre-heat grill to medium-low heat. Cut peaches in half and remove pit. Brush with olive oil. Grill for 6-8 minutes until slightly tender, turning once.

While peaches are cooking, season salmon with salt and pepper. Place soaked plank on grill, close lid, and heat for 3 minutes. Using tongs, flip plank and place salmon on hot side of plank. Close lid and cook for 12-15 minutes until medium. Remove plank and salmon from grill.

LAST: Arrange greens on large platter and arrange toppings around plate. Flake salmon with fork and add to salad. Serve with buttermilk dressing.

"Southern" Cobb Salad?

I've lived in the South all my life, and have never seen ANYTHING Southern that included ingredients like avacado or wild salmon. Maybe you meant "Southern California" cobb salad?
