Southwest Fried Oysters

Ingredients

  • 2 pints fresh oysters,drained
  • 1 cup buttermilk
  • 1 cup fat free buttermilk
  • 1 cup all-purpose flour
  • 1 tbsp paprika
  • 2 tsp garlic powder
  • 1 1/2 tsp dried oregano
  • 2 tsp chili powder
  • 1 1/2 tsp ground red pepper
  • 1/2 tsp dried mustard
  • 1/2 tsp each salt and pepper
  • 1 cup canola oil, for frying

Cooking Instructions

Combine oysters and buttermilk in a lg shallow dish. Cover, chill at least 2 hrs. Drain oyster well. Combine flour,and next 9 ingredients. Dredge oysters in flour mix, shake off excess. Heat oil in lg pot, Fry oysters in small batches for 3 minutes or until golden.

Recipe Notes

You can vegetable oil, I just prefer canola oil.
