Southwestern Black-Eyed Peas

Ingredients

  • 1 cup sliced okra
  • 1 small onion, chopped (1/4 cup)
  • 1/2 tsp salt
  • 1/4 tsp red pepper sauce
  • 2 cloves garlic, crushed
  • 1 tbsp chopped fresh cilantro
  • 1 small tomato, seeded and chopped (1/2 cup)
  • BLACK-EYED PEAS WITH HAM
  • 1 tbsp vegetable oil
  • 3/4 cup dried black-eyed peas (6 ounces)
  • 2 cups water

Cooking Instructions

1. Heat water and peas to boiling in 2-quart saucepan. Boil uncovered 2 minutes; reduce heat to low. Cover and simmer 30 to 40 minutes, stirring occasionally, until beans are tender (do not boil or peas will burst); drain.

2. Heat oil in same saucepan over medium heat. Cook okra, onion, salt, pepper sauce and garlic in oil about 5 minutes, stirring occasionally, until onion is tender. Stir in cilantro, tomato and beans. Cook, stirring occasionally, until hot.
