Soybean Loaf

Ingredients

  • 2 cups dry soybeans
  • 3 tbsp unrefined oil
  • 1/2 cup chopped onion
  • 2 celery stalks, chopped fine
  • 1-1/2 cups dry whole wheat bread crumbs
  • 1 egg
  • 1 tsp sage
  • 2 tbsp raw honey
  • 2 tsp sea salt
  • 2 cloves garlic
  • 1/4 tsp cayenne pepper
  • 1 cup homemade tomato sauce
  • grated cheese

Cooking Instructions

Soak soybeans overnight and then cook until tender. Drain. Save the liquid for stock. Put beans through food chopper (using coarse knife) or blend 1/3 cup at a time in a blender.

Heat a large frying pan. Add oil and chopped soybeans. Saute until brown.

Add other ingredients, tomato sauce last, saving 1/4 cup. Mix lightly.

Shape into a loaf in a greased 9 x 5 loaf pan. Bake 1 hour at 350.

Pour remaining sauce over loaf. Add grated cheese if you like and bake 5 more minutes.

Serve with tomato sauce or gravy.
