Spanish Garlic Shrimp

Ingredients

  • 2 tsp olive oil
  • 1 cup each chopped onion and bell pepper
  • 1/2 cups chicken broth
  • 2 Tbsp each minced garlic and lemon juice
  • 2 tsp flour
  • 1/4 tsp each paprika, salt and pepper
  • large shrimp, thawed

Cooking Instructions

Heat oil in large nonstick skillet. Add onion and bell pepper; sauté 4 minutes. Stir in remaining ingredients except shrimp, bring to simmer and cook 2 minutes.

Add shrimp and, stirring often, cook 2 minutes or until cooked through.

Serve with lemon wedges over quick-cooking saffron risotto or yellow rice.
