Special Sauce

Ingredients

  • 1/2 cup dry red wine
  • 2 tsp flour
  • 1/4 cup milk
  • stick butter, cut in small pieces
  • 2 tsp Worcestershire sauce
  • 1/4 tsp hot-pepper sauce (optional)
  • 1/8 tsp salt, or to taste
  • 1/4 cup cilantro leaves, coarsely chopped

Cooking Instructions

Stir wine and flour with a whisk in a small saucepan until blended. Bring to a boil, reduce to a simmer and cook until thickened. Stir in milk; heat until barely simmering.  

Off heat, stir in butter, Worcestershire sauce, hot-pepper sauce (if using) and salt until butter melts, then stir in cilantro.
