Wash, stem, and pit firm black cherries. Measure them and add an equal amount of sugar and a third as much vinegar. Place in a deep kettle with a cheese-cloth bag containing spices, using more if desired.
Bring to a boil and simmer for about 1 hour, or until very thick. Discard spice bag and pour cherries into hot sterilized jars. Seal at once.
