Spiced Peaches In White Wine Syrup

Ingredients

  • 1 bottle Sauvignon Blanc or rose
  • 1 cup apple cider vinegar
  • 2 3-inch pieces of cinnamon
  • 6 whole cloves
  • 8 black peppercorns
  • Zest and juice of 1/2 lemon
  • 1-1/2 cups sugar
  • 8 ripe peaches, peeled
  • Amaretti cookies (optional)
  • Spiced Peach Ice Cream (optional), to serve

Cooking Instructions

Mix together the wine, vinegar, cinnamon, cloves, peppercorns, lemon zest and juice, and sugar. Bring to a boil, lower the heat, and cook until the sugar dissolves. Add the peaches and poach until tender but not soft, about 5 to 10 minutes. Discard the zest.

Serve the peaches with amaretti cookies and spiced peach ice cream, if desired.
