Combine, stir and heat slowly until just under the boiling point: 1/4 cup whole cloves
1/4 cup allspice
2 tablespoons mace
3 tablespoons celery seed
1/4 cup mustard seed
6 tablespoons whole black pepper
3 tablespoons turmeric
1/4 cup fresh or dried gingerroot
1-1/2 gallons cider vinegar
2 cups sugar
Place these ingredients in a covered noncorrodible container. Slice and add for 24 hours: 4 or more cloves garlic
Remove the garlic. Allow the other ingredients to steep 3 weeks. If ground spices are used, filter the vinegar before storing; otherwise strain and pour into sterile glass bottles. Cork tightly.
