Spicy Chicken Chili

Ingredients

  • 1 lb ground Chicken
  • 1/2 cup chopped onion
  • 2 cans diced tomatoes with green chilies, undrained
  • 3 cans red kidney beans, drain 3/4 of liquid
  • 1 pkg McCormick's chili seasoning
  • 2 Tbs cooking oil
  • 2 Tbs tomato paste
  • Shredded or crumbled cheddar cheese
  • Sour cream

Cooking Instructions

In skillet, heat oil over medium-high heat and brown ground chicken.

In crock pot, add tomatoes, onion, tomato paste, and McCormick's chili seasoning. Mix until well blended. Add kidney beans and browned ground chicken. Cook on high or auto for 6 hours, stirring occasionally.

Top with cheddar cheese and a dollop of sour cream.

Very good!

Simple to make and very healthy. The ground chicken is an excellent alternative for those who don't eat red meat.
