Spicy Mango Ginger Salsa

Ingredients

  • 1 whole mango (diced) about 1 cup
  • 1 medium tomato (diced)
  • 1 whole scallion (thinly sliced) about 2 tablespoons
  • 1/2 canned pepper in adobo (minced) about 1/2 teaspoon (or to taste)
  • 1/2 teaspoon fresh grated ginger
  • juice of half a lime (about 1 tablespoon)

Cooking Instructions

Top grilled pork tenderloin tuna or salmon with this delicious topping and it easily turns your meal into something spectacular.

Combine ingredients in a small bowl; season with salt and pepper to taste.

Can be served immediately or kept in refrigerator for up to two days.

Bring to room temperature before serving.
