Spicy Shrimp Spring Rolls

Ingredients

  • 2 tsp finely minced fresh jalapeño pepper
  • 1 tsp Dijon mustard
  • 8 spring-roll wrappers or lettuce leaves
  • 1 cup julienned red bell pepper
  • 2 cups mung bean sprouts, rinsed and dried
  • 8 fresh large shrimp, shelled and deveined
  • 2 tbsp horseradish
  • 1/2 cup water chestnuts
  • 1 cup julienned yellow bell pepper

Cooking Instructions

1. Bring a small pot of water to a boil. Cook the shrimp for 1 minute, drain, rinse under cold water, and cool.

2. In a large mixing bowl, combine the shrimp, beans, peppers, water chestnuts, horseradish, jalapeño pepper, and mustard. Mix well.
