Wash and dry the spinach and discard the stems. If leaves are small, leave whole; if large, cut or tear into bite-size pieces. Toss the spinach, mushrooms, and eggs together in a salad bowl. Mix in a separate bowl the vegetable oil, sesame oil, if you want to use it, sugar, lemon juice, mustard, pepper, and salt. Beat well, then pour over the salad and toss until all leaves are coated. Serve on individual plates and sprinkle the bacon over each serving.
